Chardonnay wine pairs with food better than any other white wine. Why? Because Chardonnay it is not a wine of extremes, it is not heavy in tannins or acid but it has better structure than other white wines. This is why so many people think of this wine as a chameleon. Chardonnay's food pairing characteristics are frequently overstated. True, it is tough to find foods which Chardonnay wine would not conflict, but not to conflict is different than complimenting food.   • Grilled or Roasted Chicken – Pairing Chardonnay wine with chicken is a classic combination. This simple rosemary and lemon chicken is perfect compliment.   • Snapper or Other White Fish – Snapper may be the typical fish to pair with this white wine. It is not too fishy it is rich and flourishes with butter based sauces. When serving snapper and Chardonnay wine, it is best to keep all the ingredients simple and let both the fish and wine shiny.
  • Shrimp, Crab or Lobster in Pasta Cream SaucesChardonnay wines pair great with cream sauces, better than any other wines. The heavier acid content that have some wines paired with other sauces can cause the cream to curdle for lack of a better term, which tastes bad as it sounds. If you are looking for great dish, pair a rich shrimp with a same rich cream sauce and serve a nice Chardonnay with it for a good compliment.
  • Other General Guidelines and Classic Meals – Fact is that Chardonnay wine will pair great with almost any seafood. Yes, there are some wines such as Pinot Grigio or Riesling that may work a little better but there are few types of seafood that will conflict with Chardonnay. If you are pairing this white wine with cheese make sure you do that with softer cheese if you want to make your pairing work. Also, make sure you serve the Chardonnay wine right. The correctly serving means not to serve the wine directly out of the refrigerator and don't put ice in the glass. Chardonnay wines are meant to be served at cellar temperature.
